Capers
This bud herbaceous or shrubby plant species
Capparis spinosa Caper family. Fruits are oval-shaped,
fleshy, green. They contain a lot of nodular brown
seeds. It's a very important time to gather buds - until
they reach a large size and began to blossom. The
most valuable buds - small, round and firm.
Capers washed, dried in the sun and then folded into
jars and preserved in salt brine or acetic salt dissolved

Capers cotain alkaloid kapparidin; honey. In the fruit

ascorbic acid, thioglycosides, steroidal saponins,
mirozin enzyme, a red pigment, and iodine. Bud 21-29%
of proteins, 3-4,6% fat, .32% of rutin to 150 mg% of
vitamin C, essential oils, pectin. The seeds to 18%
protein and 26-36% fatty semidrying oil.
All of the caper bush has analgesic, antiseptic and
astringent properties. Not surprisingly, the decoction
of its flowers, fruits, leaves and roots from ancient
times used to heal wounds, toothaches, heart disease
